The difference between modern and traditional methods of Olive Oil Extraction

In recent years, the production of olive oil has significantly shifted towards modern techniques, moving away from traditional pressing methods. However, many producers continue to use the old method for several compelling reasons.
Traditional Cold Pressing Method
The traditional cold pressing method is unique because it relies solely on pressure to extract oil from olives, without adding water or heat, ensuring gentle treatment of the olives. In this process, a machine exerts extremely high pressure (approximately 400 times the pressure of Earth’s atmosphere) on the olives. The olive paste is then spread in thin layers between pressing disks, forming a stack. This pressing extracts the liquid part, known as olive must, which is separated into oil either by natural settling or using a centrifuge. Initially, both traditional and modern methods involve grinding and mixing the olives into a paste.
Modern Method
The modern method, however, involves placing the olive paste into a machine called a “DECANTER.” This machine rapidly spins the paste, sometimes with added water to aid in separation. The spinning process helps to efficiently separate the oil from the water and solids, which are then collected through different channels.
Quality and Healthiness
Both methods produce healthy and high-quality olive oil. However, some people believe the traditional method is superior. As one experienced oil producer put it, “THE TRADITIONAL PRESS EXTRACTS THE OIL AS GOD ALMIGHTY CREATED IT.” This sentiment reflects a deep respect and preference for the traditional method of olive oil production.
